About green cardamom

Green cardamom is the seed pod of Elettaria cardamomum, a perennial plant grown under forest shade in the high ranges of the Western Ghats. Much of India's small cardamom comes from Kerala's Idukki district and neighbouring areas.

Pods are harvested by hand at near-maturity and dried carefully to hold their green colour. The aroma sits in the small black seeds inside.

Buyers usually specify pod size in millimetres, colour, the share of open or split pods, and moisture. Cardamom is sensitive to heat and humidity, so packaging and transit conditions matter as much as grade.
