About cloves

Cloves are the unopened flower buds of Syzygium aromaticum. They are picked by hand while still pink and dried until they turn a deep reddish brown.

In southern India the tree grows in hill areas alongside other plantation crops. Quality is judged on head intact, stem content, colour and oil.
