About cinnamon

True cinnamon comes from the inner bark of Cinnamomum verum. The bark is peeled from young shoots and rolls into quills as it dries.

It is lighter and more delicate than cassia, which comes from related Cinnamomum species. The two are often confused in trade, so we always state the species on documentation.

Confirm the species, form and length you need when you enquire.
